  • 1/2 cup (approx. 125g) Canned Pineapple Chunks or Tidbits, in juice, drained: Using pineapple canned in its own juice (not heavy syrup) helps control the sweetness and calorie count. Ensure it’s well-drained to prevent a watery dish.
  • 1 tablespoon Pineapple Juice (reserved from the can): A little extra juice enhances the pineapple flavor and adds a touch of moisture if your cottage cheese is very thick.
  • Optional: Pinch of Salt: A tiny pinch can enhance the overall flavors, balancing the sweetness and tang.
  • Optional: Dash of Cinnamon or Nutmeg: For a warm, spiced twist, especially nice in cooler months.
  • Optional: 1 teaspoon Honey or Maple Syrup: If you prefer a sweeter dish, especially if using tart fresh pineapple.

Instructions

  1. Prepare the Pineapple: If using canned pineapple, open the can and drain the pineapple chunks or tidbits thoroughly, reserving about 1 tablespoon of the juice. If using fresh pineapple, peel, core, and dice it into bite-sized pieces.
  2. Combine Ingredients: In a medium-sized bowl, add the cottage cheese.
  3. Add Pineapple: Gently fold in the drained pineapple pieces. Avoid overmixing, which can break down the cottage cheese curds too much.
  4. Incorporate Juice & Seasonings (Optional): Stir in the reserved pineapple juice. If you’re using salt, cinnamon, nutmeg, or sweetener, add them now and gently mix to combine.
  5. Taste and Adjust: Give it a quick taste. If you desire more sweetness, add a touch more honey or maple syrup. If it seems too thick, a tiny bit more pineapple juice can be added.
  6. Chill (Recommended): For the best flavor, cover the bowl and chill in the refrigerator for at least 15-30 minutes. This allows the flavors to meld together beautifully.
  7. Serve: Scoop into bowls and enjoy immediately.
