Instructions
Making the Poffertjes
- Prepare the Batter:
- In a large mixing bowl, combine the all-purpose flour, buckwheat flour, sugar, salt, and instant yeast.
- In a separate bowl, whisk together the warm milk, egg, melted butter, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until you achieve a smooth batter. Cover the bowl with a clean kitchen towel and let it sit in a warm place for about 30 minutes, allowing the yeast to activate and the batter to rise.
- Cook the Poffertjes:
- Preheat a poffertjes pan (or a non-stick skillet if unavailable) over medium heat. Lightly grease the pan with a small amount of butter.
- Once the pan is hot, pour a tablespoon of batter into each cavity of the poffertjes pan. Cook for 1-2 minutes or until bubbles form on the surface, then gently flip them over using a skewer or fork. Cook for another 1-2 minutes until golden brown.
Making the Honey Butter
- Prepare the Honey Butter:
- In a small bowl, combine the softened butter, honey, and cinnamon (if using). Mix until smooth and well incorporated.
Serving the Poffertjes
- Serve:
- Transfer the cooked poffertjes to a serving platter. Drizzle generously with the prepared honey butter.
- Dust with powdered sugar and garnish with fresh berries and mint leaves for a pop of color and flavor.
