Instructions

Follow these step-by-step instructions to prepare Gajar Ka Barfi:

  1. Prepare the Carrots:
    • Wash and peel the carrots. Grate them finely using a grater or a food processor.
  2. Cook the Carrots:
    • Heat 1 tablespoon of ghee in a large non-stick pan over medium heat.
    • Add the grated carrots and sautรฉ them for about 5-7 minutes until they are soft and the raw smell disappears.
  3. Add Milk:
    • Pour in the milk and bring the mixture to a gentle boil.
    • Lower the heat and let it simmer, stirring occasionally, until the milk reduces and thickens.
  4. Incorporate Sugar:
    • Add sugar to the carrot-milk mixture and stir well.
    • Continue cooking on medium heat, stirring frequently, until the mixture thickens and starts to leave the sides of the pan.
  5. Flavor the Mixture:
    • Add cardamom powder, soaked saffron, and the remaining ghee.
    • Mix thoroughly to incorporate the flavors.
  6. Add Nuts:
    • Stir in the chopped nuts and continue to cook for another 2-3 minutes.
  7. Set the Barfi:
    • Grease a tray or plate with a little ghee.
    • Pour the prepared carrot mixture onto the tray and spread it evenly using a spatula.
  8. Cool and Garnish:
    • Allow it to cool at room temperature or in the refrigerator until it sets.
    • Garnish with slivered almonds, pistachios, and optional silver leaf.
  9. Cut into Squares:
    • Once set, cut the barfi into squares or diamond shapes and serve.
