Instructions
Follow these step-by-step instructions to prepare Gajar Ka Barfi:
- Prepare the Carrots:
- Wash and peel the carrots. Grate them finely using a grater or a food processor.
- Cook the Carrots:
- Heat 1 tablespoon of ghee in a large non-stick pan over medium heat.
- Add the grated carrots and sautรฉ them for about 5-7 minutes until they are soft and the raw smell disappears.
- Add Milk:
- Pour in the milk and bring the mixture to a gentle boil.
- Lower the heat and let it simmer, stirring occasionally, until the milk reduces and thickens.
- Incorporate Sugar:
- Add sugar to the carrot-milk mixture and stir well.
- Continue cooking on medium heat, stirring frequently, until the mixture thickens and starts to leave the sides of the pan.
- Flavor the Mixture:
- Add cardamom powder, soaked saffron, and the remaining ghee.
- Mix thoroughly to incorporate the flavors.
- Add Nuts:
- Stir in the chopped nuts and continue to cook for another 2-3 minutes.
- Set the Barfi:
- Grease a tray or plate with a little ghee.
- Pour the prepared carrot mixture onto the tray and spread it evenly using a spatula.
- Cool and Garnish:
- Allow it to cool at room temperature or in the refrigerator until it sets.
- Garnish with slivered almonds, pistachios, and optional silver leaf.

- Once set, cut the barfi into squares or diamond shapes and serve.
