Robin’s Egg Rice Krispie Treats

Ingredients

  • Rice Krispies Cereal: The foundation of our treat, providing that signature crispy texture. You’ll need about 6 cups of Rice Krispies cereal for a standard batch. Look for a fresh box to ensure maximum crunchiness.
  • Marshmallows: The glue that holds everything together and contributes to the gooey sweetness. 10 ounces of mini marshmallows melt quickly and evenly, but you can also use large marshmallows – just be sure to chop them up a bit before melting. For a truly decadent treat, consider using vanilla bean marshmallows.
  • Butter: Adds richness and flavor, helping the marshmallows melt smoothly. Unsalted butter is preferred to control the overall saltiness of the treats. About 4 tablespoons will do the trick.
  • Vanilla Extract: Enhances the sweetness and adds a warm, comforting flavor. A teaspoon of pure vanilla extract makes a noticeable difference. For a bolder vanilla flavor, try using vanilla bean paste.
  • Blue Food Coloring: Transforms the treats into their signature Robin’s Egg blue. Gel food coloring is recommended as it’s more concentrated and won’t thin out the marshmallow mixture as much as liquid food coloring. Start with a few drops and add more until you achieve your desired pastel blue shade.
  • Candy Speckled Eggs (Robin’s Eggs): The star of the show! These candy-coated chocolate eggs provide the “Robin’s Egg” look and add a delightful crunch and chocolatey flavor. You can find them in various sizes and colors, but the classic pastel speckled eggs are perfect.
  • Optional: White Chocolate or Candy Melts: For extra decoration and sweetness, you can drizzle melted white chocolate or candy melts over the finished treats. This also adds a nice visual contrast.

Instructions

  1. Prepare Your Pan: Lightly grease a 9×13 inch baking pan with butter or cooking spray. This will prevent the Rice Krispie treats from sticking and make them easier to remove once set. You can also line the pan with parchment paper, leaving an overhang on the sides to lift the treats out easily.
  2. Melt the Butter: In a large, microwave-safe bowl or a large saucepan over low heat, melt the butter. If using the microwave, heat in 30-second intervals, stirring in between, until fully melted. If using the stovetop, melt over low heat, stirring occasionally. Be careful not to burn the butter.
  3. Add Marshmallows and Vanilla: Once the butter is melted, add the marshmallows to the bowl or saucepan. If using the microwave, heat in 30-second intervals, stirring after each interval, until the marshmallows are completely melted and smooth. If using the stovetop, stir constantly over low heat until the marshmallows are melted and smooth. Remove from heat and stir in the vanilla extract.
  4. Incorporate Food Coloring: Add a few drops of blue food coloring to the melted marshmallow mixture. Stir well to combine. Continue adding food coloring, a drop at a time, until you achieve your desired pastel Robin’s Egg blue color. Remember that the color will lighten slightly when you add the cereal.
  5. Combine Cereal: Pour the Rice Krispies cereal into the bowl with the melted marshmallow mixture. Gently fold the cereal into the marshmallow mixture using a spatula until all the cereal is evenly coated. Be careful not to crush the cereal while mixing.
  6. Add Robin’s Eggs (Optional – Mix-In): If you want some Robin’s Eggs mixed directly into the treats, gently fold in about half of the candy eggs now. This is optional but adds extra flavor and visual appeal throughout the treat.
  7. Press into Pan: Transfer the Rice Krispie mixture to the prepared baking pan. Using a greased spatula or your greased hands (lightly wet hands also work well), gently press the mixture evenly into the pan. Avoid pressing too hard, as this can make the treats dense.
  8. Decorate with Robin’s Eggs: While the treats are still slightly warm and soft, gently press the remaining Robin’s Eggs onto the top of the treats. Arrange them randomly or create a pattern, as desired. Press them in slightly so they adhere to the treats as they cool.
  9. Cool and Set: Allow the Rice Krispie treats to cool and set completely at room temperature. This usually takes about 30 minutes to an hour. You can speed up the setting process by placing the pan in the refrigerator for about 15-20 minutes.
  10. Cut and Serve: Once the treats are fully set, cut them into squares, rectangles, or any shapes you desire. For clean cuts, use a sharp knife and wipe it clean between cuts if necessary. Serve and enjoy!
