Making Russian Vanilla Kissel is a straightforward process. Follow these steps for a perfect dessert every time:
- Prepare the Vanilla:
- If using a vanilla bean, slice it lengthwise and scrape out the seeds. Combine the seeds and the pod with the milk in a medium saucepan.
- If using vanilla extract, you can add it later in the process.
- Heat the Milk:
- Place the saucepan over medium heat and slowly bring the milk to a simmer. Stir occasionally to prevent the milk from scorching.
- Mix Sugar and Cornstarch:
- In a separate bowl, whisk together the granulated sugar, cornstarch, and a pinch of salt. Ensure there are no lumps.
- Combine Mixtures:
- Gradually add the sugar-cornstarch mixture to the simmering milk, whisking constantly to avoid clumps.
- Thicken the Kissel:
- Continue to cook, stirring continuously, until the mixture thickens to a pudding-like consistency. This should take about 5-7 minutes.
- Add Vanilla Extract:
- If you are using vanilla extract, remove the saucepan from heat and stir it in at this point.
- Remove Vanilla Bean:
- If you used a vanilla bean, remove the pod from the Kissel.
