Strawberry Yogurt Bark Recipe

  • Greek Yogurt: 2 cups. The base of our bark, Greek yogurt is packed with protein and provides a creamy, tangy foundation. Opt for plain or vanilla flavor, depending on your sweetness preference. Full-fat, low-fat, or non-fat will all work, though full-fat will yield a richer, creamier texture.
  • Fresh Strawberries: 1 cup, hulled and sliced. These ruby red jewels are the star of the show! Fresh strawberries bring vibrant color, juicy sweetness, and a burst of summery flavor. Choose ripe, firm berries for the best taste and texture.
  • Honey or Maple Syrup: 2-3 tablespoons (optional). For a touch of added sweetness, especially if using plain yogurt. Honey adds a floral note, while maple syrup lends a warmer, caramel-like flavor. Adjust the amount to your liking or omit entirely for a less sweet bark.
  • Lemon Juice: 1 teaspoon (optional). A squeeze of fresh lemon juice brightens the flavors and adds a subtle tartness that complements the sweetness of the strawberries and yogurt.
  • Optional Toppings: A sprinkle of your favorites! Consider shredded coconut, mini chocolate chips, chopped nuts (almonds, pecans, walnuts), granola, seeds (chia, flax, pumpkin), or a drizzle of melted dark chocolate for extra flavor and texture.

Instructions

  1. Prepare Your Baking Sheet: Line a baking sheet with parchment paper or a silicone baking mat. This is crucial to prevent the yogurt bark from sticking and makes removal a breeze later on. Ensure the parchment paper or mat is large enough to accommodate the yogurt mixture and extends slightly beyond the edges of the baking sheet for easy lifting.
  2. Prepare the Yogurt Base: In a medium-sized bowl, combine the Greek yogurt, honey or maple syrup (if using), and lemon juice (if using). Whisk everything together until smooth and well combined. Taste and adjust sweetness if needed. If you prefer a thinner bark, you can add a tablespoon or two of milk or yogurt. For a thicker bark, you can strain the yogurt through cheesecloth for a few hours to remove excess whey.
  3. Spread the Yogurt Mixture: Pour the yogurt mixture onto the prepared baking sheet. Using a spatula or the back of a spoon, spread the yogurt evenly into a thin layer, about ¼ to ½ inch thick. Aim for a rectangular or square shape for easier breaking into pieces later. The thinner the layer, the quicker it will freeze, and the crispier the bark will be.
  4. Arrange the Strawberries: Gently press the sliced strawberries into the yogurt layer. Distribute them evenly across the surface, ensuring they are slightly submerged in the yogurt. You can arrange them in a decorative pattern or simply scatter them randomly. If you’re using other fruits like blueberries, raspberries, or sliced bananas, you can add them at this stage as well.
  5. Add Optional Toppings (if desired): Now is the time to sprinkle on any optional toppings. If using shredded coconut, sprinkle it evenly over the strawberries and yogurt. For chocolate chips, scatter them lightly so they don’t weigh down the bark too much. Chopped nuts or granola can be added for extra crunch. If you’re using melted chocolate, drizzle it in a decorative pattern over the bark.
  6. Freeze Until Solid: Carefully transfer the baking sheet to the freezer. Freeze for at least 3-4 hours, or preferably overnight, until the yogurt bark is completely solid and frozen through. The freezing time will depend on the thickness of your bark and the temperature of your freezer. You’ll know it’s ready when it’s firm to the touch and doesn’t bend easily.
  7. Break into Pieces: Once frozen solid, remove the baking sheet from the freezer. Lift the parchment paper or silicone mat from the baking sheet. Gently break the frozen yogurt bark into irregular pieces. You can use your hands to snap it apart or use a sharp knife to cut it into more uniform squares or rectangles.
  8. Serve and Store: Serve the Strawberry Yogurt Bark immediately for the best texture and flavor. It will start to soften if left at room temperature for too long. Store any leftover bark in an airtight container or freezer bag in the freezer for up to 2-3 weeks. For optimal enjoyment, consume directly from the freezer.
